I Agree with what chris is getting at.. don't jump to the obvious
conclusion when a more clever one is readily available..

and the MIDDLE 2 pass slide in bench can be slid in backwards (some
clever adjusting needed)
to allow your 4 back seat passangers to face each other and possibly
play roadgames..

also the middle bench can easily be slid out (needs to be for kitchen
use/access and used in the adjoining cabin tent ( to house all of your
roadweary guests.)

don't give up on the camper.. too many people do stating 'too large a
family' ..

It is possible to seat seven in a full westy. I have the standard
passenger van bench that many people have in the passenger area to
seat two more people, and a bench from a transporter (vw commercial
van) that replaces the passenger seat.

So the seating arangement is:
3 in front (including driver)
2 in the middle
2 in back

And I still have my AC, closet, water tank, and fridge / stove / sink
combo=
.

The middle benches are pretty common, front benches come up on eBay
from time to time. Before you part with your westy interior (and take
on such a big job) you may want to consider some slide in benches.
