I agree with Stan about leaving as much as you can.

Bentley 76.7 to 76.8 covers removing the cabinet. Its not hard, I did it myself recently. I'm not sure about removing the evaporator, I"m sure there are things you should be doing to properly plug the hoses once removed, etc.

Regarding using your newfound space as storage, I have always suspected that if you remove the vent insert from the fron a stock non-ac van door will go right on with no modification. This is just a theory, but they look so similar.
