It wouldn't be high on my list of suspects, but I have heard of the honeycomb inside the cat shifting around and blocking it. I suppose it could shift back while the engine is turned off.

Is there any way you can rig a voltmeter to read the O2 sensor while driving? This would show you if it's a mixture problem.
