I have no first hand knowledge of water cooleds but... When you checked the temp sensor did you check it at the sensor? Did you check it via the wire harness from the other end?

An intermittent or constant fault in the harness seems likely to me since behavior changes if sensor is unplugged but the sensor itself tests okay.
