OK I realize this is kind of theoretical at this pint but what about running the water from the water tank? The fridge only runs an hour a day.

In fact here's a thought... create a second "hot water tank", run your fridge off of the water from it, then use the (now hot) water to shower in the morning. If you're at an RV campsite you may even be able to hook up city water and send it to grey water afterwards.
