For my general education as I shop around I'm wondering how serious coolant leaks from head gaskets in water cooled Vanagons should be considered.

If a vehicle is running okay and typically only requires the addition of a small amount of coolant every so often is this something that requires removal/reassembly of the heads with new gaskets? Does this typically precede total head gasket failure?

Such things are the issues that cause the friction between the blues states and the red states. Your future lies in the kind of coolant and the lifestyle you live.
