It really depends on your goals! Are you looking to replace the wheels? A larger tire will reduce engine RPMS while cruising and improve ride comfort. Larger tires will also reduce acceleration and braking times. Large enough and you can get away from needing the truck tire thing for capacity.

On 14" wheels, I suggest a 215/70 or 225/70 tire. Make sure the tire is rated for 44 psi inflation pressure. The 225 will not easily fit into the tire carrier and 6 inch wheels are the minimum recommended wheel width. The VW alloys are 6" wide.

If you go to a larger wheel, you will almost certainly have to go for a taller tire or be limited to a few special tires such as the 195/65-15 special used on the Eurovans. Let me know what you want to accomplish.
