Karl, I recently installed 7 amber colored LEDs to the inside of my westy parcel shelf lamp. I soldered in resistors to allow them to run on 12 volts.

By also installing another set of resistors of higher resistance to the 2nd position of the switch I was able to have "high and low" illumination from the LEDs

All 7 draw only about 45 milliwatts .04 amps on low and about 140 milliwatts on high or .14 amps.

Makes a nice night lamp for camping or if you have to get up for a sec and want to not blind your night vision.

I see no reason you can not run a pot or dimmer if it was correctly calculated to match proper resistance and ramp it up to dim the LEDs.
