Besides The Big Lebowski, and Fargo (wherein he stuffs his partner-in-crime through a wood chipper), Peter Stormare also appeared in an episode of Seinfeld, in which he plays rogue electrician "Slippery Pete", who helps George Costanza in his quest to transport a Frogger arcade game while preserving his all-time high score. Stormare also currently appears in the TV series Prison Break.

According to Wikipedia, "He has also played Carl Hamilton, a fictional Swedish secret agent similar to James Bond". I don't know which is most unlikely: a SWEDISH secret agent, or Stormare playing a tough guy named CARL HAMILTON (?!)

But my favorite is his role as Lev Andropov, the lonely and possibly insane Russian cosmonaut in Armageddon. In one scene, as the joint Russian-American space station is in imminent danger of exploding, with warning klaxons going off, he argues with an American astronaut.

Andropov: "Excuse me, but I think I know how to fix this." Watts: "Move it! You don't know the components!" Andropov: [annoyed] "Components." [He pushes the astronaut aside, rips the offending circuits from their boards, and the ship lurches forward, saving the day.] "American components, Russian Components, ALL MADE IN TAIWAN!"
