Subject:      Camping/Hiking in Escalante UT (and other spots)

We've done a bit of camping in Central Utah (north of Hanksville) and east/southeast (Moab area) but we're planning a spring trip with our two little hikers in a couple of weeks and want to hit the Bryce Area, Escalante and Capitol Reef. We need to do short hikes or we can take my son on our backs when he wipes out (my little girl is just 6 months old - she'll be "riding" the whole way). My routine of consulting the list has always worked out for trips and I hope this is no exception. We've been in the area before, but never did any primitive camping. I'm not adverse to camping at an RV place if that is the only option, but my experience in southern Utah shows me that a dirt road is almost always around the corner, with a great place to park and an amazing view of the stars. So if anyone has any secret camping spots, restaurants or hiking destinations they want to share, please let me know. We likely won't camp in Bryce since we're bringing our dog. I expect we'll spend most of our time around Escalante, but I'm certainly open to suggestions.
