As my Westy is not a daily driver I keep the fridge plugged into 110 while the Westy is in the carport. The fridge will accommodate 30 12 0z cans of your favorite beverage :-)

Maybe my fridge works better than most (or not) but I find it useful while traveling too, although I also carry an ice chest which I keep behind the passenger side seat.

On trips I'll keep beverages in the ice chest & things I don't want getting soggy in the melted ice that accumulates in the ice chest, in the fridge.

Only mod. I've done to the fridge has been to replace the stock cooling fan with a quieter computer fan.

I don't see where replacing the fridge with a cabinet will yield enough more in storage space as to make that worthwhile.
