Once you unhook the fridge propane line, you need to cap the line.

The appropriate brass fitting should be at Home Depot in the plumbing department. (yes, the propane lines are standard, not Metric threads).

Test for leaks with soapy water (kids "blowing bubble solution" works good) after you turn the propane valve back on.
