Not only is it possible, it is relatively easy. The hard part is finding the interior bits and pieces at a price you are willing to pay! I am doing this right now, a little at a time, to my "trip truck", and my daily driver. The trip truck is getting the full treatment - it was an '84 Wolfsburg, but it is getting the interior from a '91 weekender, including the Z-bed, rear-facing seats, and the table. (It is also getting a Subaru 2.2 soon.) The daily driver will have just the rear-facing seats added, to make up for the removed center seat. The worst thing there is to do is to "invent" new anchors for the bottom mounts on the rear-facing seats. Large Allen bolts, with their large openings, promise to be the most secure. Just select the size that fits the posts on the bottom of the seat, and tighten into new holes in the floor, with a washer and a nut. That should be at least as secure as the buttons welded onto the floor for the original mounts. The bracketry and belts will need new holes drilled for them, but that is not too hard.
