On my van with auto tranny, I mounted one cup holder on each side of the shifter housing. That location is a mixed blessing...cools my coffee extra quick most of the year, keeps it hot longer in the winter, but also warms up cold beverages if the heater is on.

I just pulled that shroud last weekend in order to remove the carpets for cleaning. It is held on by the two lower blower outlets...the outlets have a small flange, and the shroud has a groove on 3 sides of the corresponding vents and is simply pressed on to the flange. Removal is achieved by pulling straight towards the back of the van. Mine resisted at first, but came out without a fuss after I slightly increased the force I was using. My guess is that it would hold the weight of a couple of Big Gulps, which would apply a torque to the mount but not pull it straight back. Of course, if your plastic is brittle that might not be such a great mounting location.
