The wire from the temp switch on the fins is the hot wire.

One thing to be aware of is that VW did not include a vehicle chassis ground wiring connection for the Dometic fridge case metal in the fridge wiring. It is isolated from the vehicle metal and thus can't be reliably used for measuring voltages or for a current return path. In the stock Westy the metal propane line acts as a chassis ground wire for the fridge. People doing testing with the fridge out and people doing custom installations should add a discrete ground wire from the fridge case metal to battery negative wiring. Not doing so will also keep the pilot led from working.
