After reading all this three thoughts come to mind.

The first is that with the stock gauge you don't know what the temps are doing. With the stock gauge you have what's 'normal' for your van (at least that's how it's worked for my vans). The $50 for an aftermarket gauge & sender should give you better data.

If it is getting too hot is all the air out of the system?

Replacing a 20 year old radiator was not a 'bad' move.
