Some more reading on the subject. Most RV's with larger refrigerators do even have 12 volt capability. The large fridges will just take too much current to be practical on 12 volt. As for running the generator while traveling, the motor home burns enough fuel on its own. As for turning the fridge off while traveling, the recovery time is too long.

The propane delivery is regulated and limited in both pressure and volume. The fridge combustion chamber is sealed. As long as the fridge is turned off before pulling into fuel stations, I believe the risks are minimal. I use the propane fridge while traveling.

I have wondered about the safety of having propane flowing through the vehicle while driving, in the event of a serious collision. At least if the valve is shut off, the propane is well protected inside a thick tank. However if the valve is open, someone hits you on the side or the van rolls, and the propane line ruptures, you have a serious propane leak and the potential for spark. Of course it's admittedly not a likely scenario...
