1. Gently pry under edges of the plastic on the big end (the one attached to the door). 2. When the plastic has lifted up from the pot metal, pivot the plastic slightly (using the knob as the center point fo the pivot) to expose the screw.

The idea is to lift the plastic slightly up of the metal, then swing it parallel to the metal to get at the screw. I've gotten real good at this, because I keep forgetting to pick up some lock-tite for those screws!
