Jamie,

I going to assume you do not have the special VW radio tools otherwise you would not be asking this question.

Locate the small holes on the each end of the radio. Find a suitable nail or tool which can fit in the hole. Insert to release tha tabs on each side. It's preferable to relaese both sides at the same time but not necessarily. You can release each side individually if yo do it carefully. It would help if you take the ashtray out and reach in from behind the radio and give it a gentle push as you engage each release pin.
