Sometimes we bring the front one, sometimes we don't. I've never thought about stashing it in the rear with the camping gear -- it does tend to get in the way. Putting it behind the driver's seat also sounds like a good place, too, but the forward side of the kitchen cabinet is covered with electrical bits like the solar controller, inverter, spare 12V outlets and suchlike.

We've replaced the top of our rear table with a cutting board.
