Hi Nat: What I did was to abandon the large rear table and move the smaller front table back. Then I took a spare undertable mount and made a much smaller front table. It was made like a round serving platter. Made of 3/4 plywood mounted just off centre enough so that it would swivel & pivot between the front seats when driving. It is just barely wide enough to slip between the front seats. The edge of this platter was wrapped with two levels of 1/2 manila rope so I had about a 1/4inch+ lip to keep things from rolling off. In the centre I glued a map of my local area of exploration (300 mile radius) and covered it in a polymer clear coating from a hobby shop. Actually I mounted the table map first, then the rope border with glue and finish nails or screws . Neat idea and easily stored under the rear seat. It's only brought out if I get overly ambitious with cooking. I wish I had a picture but it's buried in the snow with the van.
