I don't have a pop top, but I haven't seen these to suggestions that MAY BE feasible.

One. Use two gas assist struts on either side of the internal side of the top. Van part anchored aft of the Pop top part, so that full closed the strut is compressed and full open the strut is extended.

The other suggestion is to incorporate a foot or step movementment instead of hand/upperbody strength. Like a pole with a sitting on a fulcrum. YOU step down on one end of the fulcrum, and other end with pole goes up-- could be a collapsibe or two piece pole for stowage.
