Are you checking the coolant level in the overflow tank, (behind the license plate), or the important tank, the pressure tank which is the one to the left, with the pressure relief cap on it. This is the tank with the sensor in it. If the system is not leak tight and/or the cap is not working properly, this tank may not be kept full. Wit the engine cold, start it, and check the level in the pressure or main tank. Open the cap and top it off if needed. Again, be do this with the engine cold. Once warm, opening the cap will cause the coolant to try escape out. If the system needs to be bleed and there have not been recent repairs, then something is wrong. The 2.1 cooling system will take care of itself unless there is a leak, bad pressure cap, or combustion gases are getting into the cooling system.
