There is a known problem with factory head gaskets on certain later year Subaru engines, especially DOHC 2.5's,...however, once you install the "revised" gaskets from the dealer you are good for 100-150k miles. The Subaru head gaskets installation procedure is like a "normal" engine. Remove head, install 1 gasket (dry, no goop) then follow torque sequence. Compare this to the kooky waterboxer head gaskets procedure. After you replace head gaskets on a Subaru, they are good for a long time. I've seen Waterboxers fail again within 20-30k miles. Paul G.
