You should set the meter to low ohms scale and see a reading in the low
single digits on the 12 volt heater element. Under 3 ohms I think. The
110 volt element will be much higher, over 100? The expected values are
in a Dometic troubleshooting guide on the net somewhere but I don't
remember exactly.

Yes, infinity would mean a broken wire or very bad connection, assuming
the scale on the meter is set to a reasonable value range.
