I think a "collar" around the strut tube similar to the way a bar clamp works would be the way to do it. This way you can easily adjust the height. This type of design would be simple and easy to fabricate. I'll work on a prototype next week at work. I was just thinking of this the other day when my kids' water bottles and stuff kept falling out of the bunk area.
