Some time ago at sportsmanswhorehouse in Idaho I bought a niftyneatowaykewl Coleman (tm) folding aluminum table with folding stools. Seems just right for the westy. It's aluminum so hot cooking utensils wont melt it. Folds up into a neat package fits well in the rear behind the seat. For those expeditionary adventures 'off the grid' and away from the 'real' motorhomes just the ticket.

Our salvage green naugahyde (now on the endangered materials list) tablecloths (Souveniers of Harry's Bar and Grill now 4th Street) fit just fine. For other tables a grommet in corners makes it easy to secure in Force 9 or maybe just Force 5. Although not as sheik as the classic red/white plaid of other campers they seem to not clash with the environment and require as much care. Note these are not the rite-aid minimart chintzies, these are industrial -commercial grade and like your humble conveyance built to last. Harry's was closed some nine years past. Spirit lives on in the tablecloths. Clamping is done with socks filled with sand, government issue rocks, c clamps from sears and sawbuck, or just plain parachute cord with grip sliders.

Since camping in a westy requires some forethought with respect to functional density this set up has its merits along with Mayan hammocks, pressure cookers whose handles are removable, kerosene (Dietz) lantern, Pyromid cooker, and Kershaw blade trader, shadyboy, gary lee racks. Most are niceties some are necessaries.
