what about one of those old-timey drive-in type 'tray' tables, that
latched onto your partly-rolled-up window?? and had a leg or two to
brace against the side of the car.

you could get a metal tv-dinner type table for the den/living room at
wal-mart or some such, with the fold-up legs, and adapt that to latch
onto the opened sliding door window. or just the aluminum frame of the
window. or be held securely by the window being closed on it.
