The downside of using the Element for a base vehicle is that it only carries 675 lbs. before it grosses out. I have seen "pop-ups" similar to the one you linked to Jake, on a Ford F-150 truck. It was very cool, easy to operate and looked comfortable. The guy used the bed of the truck to stow everything else to keep the "camper" free of a bunch of stuff. The guy did say it wasn't comfortable for severe/serious winter camping .... just no way to heat it sufficiently. He did his cooking from the tail gate. He said there was enough "living space" along with the separate sleeping space, to make it comfortable for extended trips. If I recall, he mounted it at cab-height, not bed-rail height, so he had room in the bed for even sleeping if needed.
