Much harder to do(radiused corners, attaching 3 mm to 19 mm, etc), not as strong, & the 19 mm(3/4") is not very heavy itself compared to MDF ply, etc.

The advantage of the 19 mm veneer core plywood is its strength, beauty, low cost, sustainability, & simplicity to make into things w/ o the need to edge band.

Westfalia also used it extensively in their earlier campers.
