Hi, we use 3 bread box from IKA, work them a bit on the rear-top to gain some room under those one, all join together, we added magnetic latch. The underneath and back.... plate of steel. The metal rail under are long magnet, nice to hang metal stuff (cup, bowl, utensil, sharp knife... NOT) wile camping. 3 box wide are just enough to clear the sink (brush tooth, climb up there, dishes...). It doesn't clear the stove. Anyway, i don't put my head over what i cook... and i rarely cook inside anyway. There is a price to pay to get that much more storage area.

Yes, the thing wrap around the paper towel is a part of a plastic bottle (trick from a friend in NS), nice when driving with the windows open.
