You can put the wooden face and door back on without the fridge installed. You may have to add a small L bracket out of some light gauge sheet metal toward the bottom to hold the frame, but the top ones will still work fine. You could then simply attach some adjustable shelving brackets, like they have in book cases (fully adjustable) and then cut as many shelves as you want. Melamine (vinyl covered plywood) would work well for shelving with matching edging any lumber yard should sell. The edging is applied with a household iron. You could also get fancy in use some T molding on the edges or solid wood for that matter. The whole process would be reversible. You will need to also disconnect the propane line and plug the hole. I think it's 3/8 MPT. And then the vent cover would also need to have a piece of rubber installed on the backside to keep out the elements. I think you could do the whole job in about two to three hours.
