I second the Koni recommendation. With any other shock, you're limited to "one setting," and if it rides too hard or soft for your tastes ... well, you just spent a few hundred bucks on shocks you don't much like. Too bad they'll probably last ten years. :-) The Koni's virtually eliminate that risk, and have exceptional performance in their own right. Also, as Mike points out, you can readjust them to compensate for wear. All shocks will tend to get softer over time; this is not a "defect" covered by a lifetime warranty, but normal wear and tear. Only the Koni's allow you to compensate for this and restore your "new shock" ride.
> No one makes Westy/non-Westy specific shocks.) Not exactly, but in Germany Sachs/Boge offers a HD shock that is better suited to the added weight of the Westy. While they don't sell them in the U.S., I do, and they are my second choice after the Koni's. Although not adjustable, they offer a great balance of performance and comfort.
