Obviously I'm talking about the kind that's thin steel bonded or crimped to a composite material.

Jim, the full gasket sets I use & sell come with four of those gaskets. What brand did you get ? Are you sure you got a full gasket set and not a head set ? Metal side of the gasket toward the exhaust port in answer to your second question.
