When I only had an '84 7 passenger and an '85 Westy (the Westy already has middle seat rails) I used to "Borrow" the middle seat out of the 7 passenger for Westy use. The problem with that was that the '84's middle seat doesn't have folding seat backs so it made access to the rear seat a real bear. If I put the seat in facing aft, then access was OK but leg room suffered.

I bought a middle seat from Chris Turner that has folding backs so now I'm a happy camper, so to speak. Yes, the middle seat slides right up to the kitchen cabinet but during the times I've needed the Westy to be a people hauler, it didn't matter. Much of the time it is in storage but it does get used.
