Tall jack stands under the rear suspension (rear end needs to be about 2 1/2' off the ground) and a standard 2 ton floor jack with a plywood square on it to support the engine. I highly recommend a VW engine stand too, it saves the back! You can rent the jack, but they are so cheap now it's worth buying one at your favorite big box store. I've seen them for $65 at wally world. Getting it out is the easy part, lining it up with the clutch when installing is the fun part.
