Why couldn't the original type plastic cover just be painted with
something like Krylon Fusion (paint for plastics) to protect it from UV
damage?

I have been using a plastic cover from a car wax can on mine ... full
time (except for when the fridge is used on propane) and it has been on
there for a number of years and over 50,000 miles.
