I think their pictures are poor - to me it doesn't show what you are getting.

http://www.cip1.com is where I got my sandwich adapters from as well as my oil coolers.  I usually get those cast aluminium ones - they are tough and provide good cooling.  I never use the crappy rubber hoses that come with these kits - very prone to failure.  Spend the bucks on some braided hose type ones and then cover them with some split pipe so they don't cut everything in the engine compartment.

You do NOT want to remove the oil-to-coolant bit from your engine.  Don't think of this as an oil cooler, rather as an oil temperature regulator.  It also performs the job of getting the oil warmed up faster so there is less wear when the engine is cold.  The issue is that when you really push the engine it usually can't cool the oil off enough with the size that it is.  It also adds more heat to the coolant system which is already getting heat from your actions - so it is better to pump that heat off straight to the atmosphere.

An external oil cooler needs to have a thermostat so it doesn't allow the oil to cool off too much.  You really want your oil in the 95 to 105C range to ensure that the moisture is boiled off.  I get nervous, even with synthetic when temperatures go above 135C for any length of time.
