Just replace them quickly one at a time and put a rag underneath the MC. The fluid loss should be minimal (as long as you are stomping on the brakes at the same time) and I don't remember having to bleed the system afterward either. The key is to not touch the brake pedal while replacing and you should be fine. If you feel softness in the pedal afterward then you should definately bleed the system but I never remember having to do this.
