I've thought many times it'd be easier to take a stock Vanagon and fab a pop top for fair Summer weather only using PVC and canvas. Sorta like the pop tops on the buses that extend straight up but w/o the fiberglass at all. It would need a 1" luan deck to place the sleeping bags on, but that could be waterproofed and installed in the Spring and removed in the Fall.
