A van-bud from Colorado has a few 3-light LED units that he wired into the rear over-stove wires, and overhead up front, that his passenger and rear seat occupants can turn on. Flexible neck. They are so "directional" that they don't seem to create glare for the driver and work extremely well. Not the end-all resource, but a place to start:
