I made sure that I didn't get a radio like that.  I bought an Icom 706MKIIG radio, not really a CB, more of an all in one radio from 160m to 70cm bands (really 500KHz to 470MHz) - the main radio is under the driver seat.  The face place is removable so I installed a small L bracket above the mirror and the radio controls (face plate) is located there.  The mic comes off of this and I can drape it over the mirror when I am using it and unplug it when I am not.  Easy to read and out of the way.

My TriStar had (now going into LT) an Alinco HF radio that didn't have a removable face plate - I mounted this against the passenger seat as the control knobs for the Syncro were in the way and it is less likely to be seen there.
