The best thing to do would be get a pressure gauge hooked up and find out what the pressure really is. That will tell you if you've got a pressure problem or just a sensor problem. You could also just swap out the sender and see if the problem goes away, that would then tend to eliminate the sender as the problem. Idle oil pressure on the boxer is pretty low, as I recall the sender switch point is 0.3 bar.
