The Vanagon's coolant capacity is 18.4 quarts -- about 4.5 gallons. That's probably at least twice that of your wife's Subaru (that's a guess, though). If your thermostat is not closing properly it'll take a while to heat all that up, and if it's really cold out it might never reach normal operating temperature.
