I would gravitate towards the Sprinter for fulltiming. A panel van works better for stealth, and as you mention the extra space and high top is handy as well.

Personally I don't like the camper floorplans I see for Sprinters sold here in North America. I was sketching on how to convert a VW Cartago camper layout to the Sprinter. I have some photos of the Carthago at: http://www.cs.rochester.edu/u/jag/vw/gen/pops/popsT4.htm

What is not shown in the photos is that the upper bed in the Carthago is hinged so that it stores tight against the high top ceiling during the day, and then slides down for use.
