I think you'll find the classic car insurance typically carry use restrictions that most of us would find unacceptable, e.g. limiting use to car shows, club events, parades etc or in some cases severely limiting the miles that can be driven.

For some of my cars I do have a value stated on the policy backed by an appraisal though that is not a guarantee I would get that amount should the worst happen. That said, my collison & comp premiums are based on the value stated so it would help my case if claim time ever comes around.

If you're Googling this topic you'll get an appreciation of the difference between 'stated value' and 'agreed value'.

My approach with the Westy is to save all receipts (esp the big ones like rebuilt engine & transaxle) and many recent pictures showing its condition.
