I too don't like adjusting shoe brakes. There is a knack for sure.

I'd suggest driving (safely) w/o using brakes. See how drums are then. If cool, then at least the shoes aren't dragging.

FWIW, I crank the shoes right out so they are tight to drum. Then back off bit by bit checking wheel spin. After driving/using them a bit, I recheck.
