Hi Miguel,I'm pretty sure he's using the spoons concave/bowl side up with the tips/ends of the spoons under each underside of the needle, then pushing the handles down so the spoon tips lever-up the needle to pop it off. Keep your eye on the needle because it will likely go flying, at least mine have a couple times. The bottom side of the spoon bowl acts like the fulcrum point, thus the need for something covering the gauge face.
