I've just completed a reseal of my '84 Wolfsburg Westy poptop & luggage rack and polished the gel coat top as well, using a 3M Marine Restorer and Wax.  This treatment has enough rubbing compound in it to remove the oxidation and bring the sheen of the popup to a nice gloss.  So if you going to repaint to the OEM Toscana Beige LT1M, I'd go with at least a semi-gloss, the textured gel coat top will affect the sheen somewhat.
