Bus Depot has the original replacement by the roll. I opted for a vinyl upholstery covering the same color as the brown cabinetry. It's a little mellower sound-wise, very durable, and provides maybe a tad more insulation. Did it all but the bottom of the upper bunks, which I will do if I ever pull them during canvas replacement or whatever. A trip to any old-school upholstery shop will turn up endless choices.

Don't use spray or canned contact adhesive. Apply with commercial grade vinyl wallpaper paste and you'll only have to do this once.
